This Organic Mexico El Porvenir is from the second-highest municipality in Mexico, Chiapas, clocking in at over 2,800 meters above sea level. The higher elevations lead to higher density beans, which when roasted with daring skill, result in brighter, more complex coffees.

Rob, our Head Roaster, roasts these beans with a bold style, applying heat aggressively during a short roasting cycle. When you’re roasting this way, there is much less room for error. That’s why it’s important to have talented folks like Rob around who have spent years honing their craft. The extra effort pays off with a wonderful surprise: a bright, fruity coffee with nice acidity and a spicy quality that will challenge your assumption about what a Mexican coffee can be.

The farmers of this wonderful coffee are part of the GRAPOS Cooperative, which was created in 2007. The cooperative has made a substantial impact for its membership of small traditional farmers by creating avenues and resources to get their harvests not only to the market but certified as well. This has allowed the farmers to have more competitive coffees in the international market. Since the co-op's founding in 2007, their membership has gone from 90 to over 2700 producers!

During the harvesting time, December to April, the members of GRAPOS process their coffee in small batches on their own farms. After the ruby-red ripe cherries are picked, they pulp them that day and ferment them for roughly 24 hours. The coffee is then washed and spread on patios to dry before heading to the village to be exported.
