Located in the east of the Department Cauca, the municipality of Inzá borders the popular coffee growing regions of Tolima and Huila. It is nestled in the great Colombian Massif and overlooks the Pacific Ocean to the west. Here, in the cordilleras, is where most of the major rivers of the country are born, including the Magdalena, the Cauca, and the Patia rivers.

Surrounded by volcanoes, the altitude and climate of this region is ideal for specialty coffee. Very small producers tend to their land and hold on to their traditions. Many of them have produced coffee with little or no chemicals for generations with the support of our exporting partners such as Pergamino and the Pillimue family.

Our Colombia Inzá is born from the fertile soil and indigenous coffee growing traditions. In recent years, Pergamino and the Pillimue family have concentrated on offering upmarket access widely in the region, putting more control in the hands of smallholder farming families. With Pergamino’s support, the Pillimue family has opened a small warehouse and cupping lab in Cauca. They act as logistics and sourcing partners and are able to provide quality assessment services for nearly 150 smallholders in the area. Most importantly, the Pillimue/Pergamino partnership enables more families than ever before to access higher prices by placing coffee on the specialty market. 

This coffee is fully washed and dried in beds under plastic. It is typical for producers in the area to do a 48-hour fermentations, mixing two days of picking in the fermentation batch. The drying usually takes 10-15 days, depending on weather conditions.
